Orecchiette with Shrimp and Asparagus

Pasta can take forever. Pasta can be boring. Pasta can be bad for you. It can be all the things you want least in a dinner…or it can be wonderful. Pasta can be fast. It can also be exciting and, while not a nutritional rockstar, it can be made healthier. So here goes nothing…

In the time it takes to boil the water and cook the pasta, you can have all the ingredients ready to go. If you do it right, it can be even faster than takeout….which is good because we can’t eat pizza and chicken wings every night and expect to still be able to climb mountains or even walk down the street. Since one of my other favorite activities (besides cooking and eating) is hiking, sometimes I have to eat food that is good for me. Not too often, just enough.

This pasta makes use of a few of my favorite ingredients: shrimp, asparagus, and tomatoes. Mix those with some sharp peppery radicchio and lemon juice and you get a fast, tasty, easy weeknight pasta dish.

Orecchiette with Shrimp and Asparagus

Use any combination of vegetables in this pasta that you like

Ingredients:

  • ⅔ lb dried orecchiette or other small, shell-like pasta
  • ½ lb asparagus, cut into 1” pieces
  • 2 cups cherry tomatoes, halved
  • 1 cup radicchio, thinly sliced
  • ½ small onion, thinly sliced
  • 1 lemon, juice and zest
  • 2 cloved garlic, crushed
  • ¼ cup chopped parsley
  • ¼ cup chopped basil
  • ¼ lb shrimp, shell off and deveined
  • red pepper flakes, salt, and pepper to taste
  • olive oil

Preparation:

  1. Boil salted water in a large pot; cook pasta until al dente; reserve ⅓ cup of the cooking water
  2. Meanwhile, saute the garlic and onion in a pan with approx 1 tbsp olive oil; add asparagus and tomatoes, cook until the tomatoes soften; add radicchio; saute until soft
  3. Add pasta, shrimp, and herbs; toss with the reserved pasta water; stir until the shrimp are pink and cooked through, approx 1-3 minutes; stir in lemon zest, red pepper flakes, and salt and pepper to taste
