Coconut Lemongrass Chicken Soup

I’ve been crazy busy with work and haven’t been posting much lately. It felt like I went weeks without ever being home in daylight – weekday or weekend. Oddly enough, I actually enjoyed being on the go without a break. It felt like every other fall in the campaign world. I thought when I took my new job that I would be missing out on the stress and the hurry that is the fall season…nope! Never a dull day in the airline world and I love it! Every day I end up learning something I had no idea I would ever even have a reason to know. It is a really good experience for someone who gets bored as easily and quickly as I tend to.

The only problem is that, now that my project is over, I don’t have much to do until the next one picks up. That lull ended up being the kiss of death for my immune system. My extra day off for a job well done ended up being a sick day snuggled up in my bed with Netflix. So much for having an extra day for adventures! That meant that today when I was feeling a bit better, it was soup time!

Spicy and sweet. Warm and comforting. Easy but complex tasting. The specifics just keep streaming through my head. As you can tell, I can be pretty picky about what I want to munch on when I’m feeling under the weather. This simple coconut lemongrass chicken soup is just the ticket to fulfill all my disparate sickly wants. It all comes together with very little effort but tastes like it was cooking for the whole day.

Don’t work too hard…or do! Just make sure that you are enjoying yourself and taking a few minutes here and there to appreciate everything going on around you. You never know what you might miss in hurry. Happy adventures! ~ Molly

Coconut Lemongrass Chicken Soup

  • Servings: 4-6
  • Time: 45 minutes

Ingredients:

  • 2 14oz cans coconut milk
  • 5 cups chicken stock
  • 2 stalks lemon grass, 1 chopped and 1 softened
  • ½ large onion, chopped
  • 2 boneless skinless chicken thighs
  • 2 scallions, chopped
  • ⅓ cup cilantro, chopped
  • 3 cloves garlic, chopped
  • ½” piece ginger, grated
  • 4 kaffir lime leaves
  • 2 medium tomatoes, sliced thickly
  • 1 lime, juiced
  • 1 tbsp sesame oil
  • 3 cups Shiitake and white mushrooms, sliced
  • 2 tbsp fish sauce
  • 1 large jalapeno

Preparation:

  1. Sweat ginger, garlic, chopped lemon grass in sesame oil; add onion
  2. Sear chicken in the soup pan; remove and set aside to rest
  3. Add chicken stock, lime leaves, and remaining lemongrass; simmer 5-8 minutes
  4. Add coconut milk, mushrooms, and fish sauce; return to simmer for another 8-10 minutes
  5. Slice chicken; add to pot; simmer 2 minutes
  6. Add scallions, cilantro, tomatoes, jalapeno and lime juice
  7. Serve with additional herbs and lime juice
