Avocado Baked Eggs

With all the festivities of a holiday weekend, I always need a fast, filling, and most importantly, very tasty breakfast before the hectic days of adventure and friends. This one fits the bill perfectly. Just toss the ingredients together and finish getting ready for the day while it all cooks to a melty, gooey, wonderful kickstart to your day. Now off to the beach to enjoy the sunshine!

This is how my favorite weekends are spent. Camped out on the beach.

Avocado Baked Eggs

  • Servings: 2
  • Print


  • 1 medium avocado, halved
  • 2 eggs
  • 1 tbsp chopped cilantro
  • 2 tbsp salsa
  • ¼ cup chopped cherry tomatoes
  • 2 tbsp shredded cheese
  • 1 tbsp chopped jalapeno


  1. Preheat oven to 450* F; place avocado halves in a baking dish
  2. Carefully place an egg in the hollow in each avocado half (you can scoop out some of the avocado if you need more space)
  3. Scatter some of the tomatoes, jalapeno, and cilantro over the egg; top with cheese
  4. Bake until the eggs are cooked to your liking, approximately 10-15 minutes
  5. Top with remaining tomatoes, jalapeno, and cilantro; serve with salsa
