Passion Fruit Mojitos

On hot afternoons, my friends and I love to sip cocktails in the shade to cool off. This is one of the simplest and most refreshing versions we whip up. The mint and lime keep the drink cool and crisp while the passion fruit gives the drink a nice twist. You can use whichever fruit you have around. Raspberries and blackberries are almost as wonderful as passion fruit. But only almost because passion fruit is its own special kind of magic. Whichever fruit you use, make sure to muddle it up before adding the soda water so you get the full effect. Now off to finish my day’s work so I can relax with one of these tasty treats this afternoon!
